I've picked out a few of my favorite recipes to help you stay healthy and stay on track, no matter what time of day it is.
For breakfast start off with an Apple and Berry Loaf. This is a fun twist on traditional breakfast foods like toast or pancakes. It's perfect for breakfast on the go or when you need something quick before running out the door in the morning. It's also great for picnics because you can make it ahead of time and store it in an airtight container in the fridge until ready to eat.
Berries are some of the healthiest foods you can eat. They're low in calories and high in fiber, vitamin C, and antioxidants. Many berries have been associated with being beneficial for heart health. These include lowering blood pressure and cholesterol while reducing oxidative stress. Apples are an incredibly nutritious fruit that offers multiple health benefits. They're rich in fiber and antioxidants. Eating them is linked to a lower risk of many chronic conditions, including diabetes, heart disease, and cancer. Apples may also promote weight loss and improve gut and brain health.
Apple & Berry Breakfast Loaf
(ONE slice = Calories 296: Carbs 16.9, Fat 9 Protein 22.3)
2 cups almond flour
½ cup desiccated coconut
2 tbsp chia seeds
2 tbsp coconut flour
1 tsp cinnamon
2 tsp baking powder
4 eggs
¼ cup almond milk, or milk of choice
1 tsp vanilla extract
2 tbsp maple syrup
1 apple, grated
1 cup mixed berries
For Topping
1/2 Tsp cinnamon
1/2 Green apply thinly sliced
Directions:
1. Preheat the oven to 160°C or 320°F. Line a loaf tin with baking paper.
2. Place the almond meal, desiccated coconut, chia seeds, coconut flour, cinnamon, and baking powder into a large mixing bowl and stir until they're combined.
3. In a small bowl, whisk the eggs, milk of choice, vanilla, and maple or rice malt syrup.
4. Slowly add the wet mixture to the dry ingredients and mix until just combined. Gently fold in the grated green apple.
5. Spoon half of the batter into the tin before adding half of the berries. Cover with the remaining batter. Arrange the extra apple pieces and remaining berries on the top of the loaf.
6. Bake for 45-60 minutes, or until the bread is golden on the top and cooked through. To test if it's cooked, insert a skewer. If it comes out dry, it's ready. Once cooked, remove it from the oven and allow it to cool in the tin.
7. When it has cooled, turn the tin upside down and remove the loaf. Once completely cooled, slice the loaf into 10 slices.

Cooling Summer Detox Juice
2 cups fresh watermelon
1 cup fresh or frozen strawberries or blackberries
1/2 fresh lime juiced
1/4 teaspoon ginger fresh preferred
1/2 cup ice more if using all fresh fruit
Directions:
You can run watermelon through a blender or juicer. Sometimes, I’ll throw in the whole green rind too if I juice the watermelon. I add ice to the blender. If juicing, I add ice after.

Chickpea salad is a great dish because it's filling but also light enough that you can eat it as a lunch or dinner during warmer months when you don't want something heavy like soup or stew. This recipe has been around for decades but remains popular because it's easy to make and tastes fantastic!

Chickpea Salad
Calories 604: Carbs 54g, Fat 34g, Protein 20g (3 Servings)
3 Tbsp extra virgin olive oil
3 Tbsp lemon juice, from 1 large lemon
1 garlic clove, pressed or minced
1/2 tsp sea salt, or to taste
1/8 tsp black pepper
1 1/2 cups cherry tomatoes, halved
1 English Cucumber, halved and sliced
15 oz chickpeas, or garbanzo beans, drained, rinsed
1/2 medium red onion, thinly sliced
1 avocado, sliced
1/4 cup cilantro, chopped
4 oz feta cheese, diced
Directions:
Combine the dressing ingredients in a small bowl: 3 Tbsp olive oil, 3 Tbsp lemon juice, 1 pressed garlic clove, 1/2 tsp salt, and 1/8 tsp pepper, and whisk to combine (or shake them together in a small mason jar).
Combine remaining chickpea salad ingredients in a salad bowl, add dressing to taste (we used all of it), and toss to coat.
